Ingredients
  

  • 2 large split bone-in chicken breasts
  • 2 tablespoons butter softened
  • 1 tablespoon dried Italian seasoning
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 teaspoon garlic powder
  • ½ cup chicken broth

Method
 

  1. Preheat oven to 375°F (190°C).
  2. Pat chicken dry and spread softened butter all over the skin.
  3. Mix Italian seasoning, salt, pepper, and garlic powder in a small bowl.
  4. Sprinkle seasoning over chicken, rubbing some under the skin.
  5. Place chicken skin-side up in roasting pan and pour broth around (not over) the chicken.
  6. Bake for 45-50 minutes until internal temperature reaches 165°F.
  7. Optional: Broil 2-3 minutes for extra-crispy skin.
  8. Rest 5-10 minutes before serving with pan juices.

Notes

  • Store leftovers in an airtight container for 3-4 days in the refrigerator or up to 2 months in the freezer.
  • For best results when reheating, use the oven at 325°F with a splash of broth until warmed through.
