Method
- Preheat oven to 375°F (190°C).
- Pat chicken dry and spread softened butter all over the skin.
- Mix Italian seasoning, salt, pepper, and garlic powder in a small bowl.
- Sprinkle seasoning over chicken, rubbing some under the skin.
- Place chicken skin-side up in roasting pan and pour broth around (not over) the chicken.
- Bake for 45-50 minutes until internal temperature reaches 165°F.
- Optional: Broil 2-3 minutes for extra-crispy skin.
- Rest 5-10 minutes before serving with pan juices.
Notes
- Store leftovers in an airtight container for 3-4 days in the refrigerator or up to 2 months in the freezer.
- For best results when reheating, use the oven at 325°F with a splash of broth until warmed through.
