Ingredients
  

  • 4 boneless skinless chicken breasts about 2 pounds
  • 3 tablespoons olive oil
  • 2 teaspoons kosher salt
  • ½ teaspoon paprika sweet or smoked
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • ½ teaspoon black pepper
  • 1 cup barbecue sauce divided

Equipment

  • Rimmed baking sheet
  • Aluminum foil
  • Meat mallet or rolling pin
  • Plastic wrap or ziplock bag
  • Meat thermometer
  • Basting brush

Method
 

  1. Preheat oven to 425°F. Line a baking sheet with foil and lightly grease.
  2. Pound chicken breasts to ¾-inch even thickness between plastic wrap.
  3. Mix olive oil with salt, paprika, garlic powder, onion powder, and black pepper.
  4. Coat chicken in the seasoning mixture, then add ½ cup barbecue sauce.
  5. Place on baking sheet and bake for 10 minutes.
  6. Brush with remaining sauce and bake 4–7 minutes more until internal temperature reaches 160–165°F.
  7. Rest for 5 minutes before slicing and serving.

Notes

  • Store leftovers in an airtight container in the refrigerator for up to 4 days or freeze for up to 3 months.
  • Try using different barbecue sauce varieties or adding a tablespoon of honey for extra sweetness.
