Ingredients
  

  • 2 8-ounce/225g boneless skinless chicken breasts
  • teaspoons olive oil
  • ½ teaspoon salt
  • ½ teaspoon garlic powder
  • ½ teaspoon paprika
  • ¼ teaspoon ground black pepper
  • 2 ounces cream cheese softened (56g)
  • ¾ cup fresh spinach finely chopped (24g)
  • 3 tablespoons grated parmesan
  • 2 tablespoons diced tomato
  • 2 cloves garlic minced
  • ¼ teaspoon ground black pepper
  • teaspoon salt

Method
 

  1. In a small bowl, mix cream cheese, spinach, parmesan, tomato, garlic, ¼ teaspoon pepper, and ⅛ teaspoon salt.
  2. Slice a deep pocket into the side of each chicken breast.
  3. Fill each pocket with the cream cheese mixture and secure with toothpicks.
  4. Rub chicken with olive oil and season with salt, garlic powder, paprika, and pepper.
  5. Preheat air fryer to 375°F (190°C).
  6. Place chicken in the air fryer basket, ensuring they don't touch.
  7. Cook for 15-17 minutes until internal temperature reaches 165°F (74°C).
  8. Let rest 3 minutes, remove toothpicks, and serve.

Notes

  • Refrigerate any leftover chicken in an airtight container for up to 3 days.
  • Reheat in the air fryer at 350°F for 3-4 minutes. For variations, try different cheese and vegetable combinations.
