Ingredients
  

  • 1 pound boneless, skinless chicken breast cut into 1-inch cubes
  • 2 tablespoons olive oil
  • 2 tablespoons cornstarch
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon dried oregano
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Method
 

  1. Pat the chicken breast dry with paper towels to remove excess moisture. Cut into uniform 1-inch cubes for consistent cooking.
  2. In a medium bowl, whisk together the cornstarch, garlic powder, paprika, onion powder, oregano, salt, and black pepper until thoroughly combined.
  3. Drizzle the olive oil over the chicken cubes, tossing to coat evenly. Add the seasoning mixture and toss until each piece is thoroughly coated. Let sit for 5 minutes to allow the seasonings to adhere properly.
  4. Set your air fryer to 400°F (204°C) and preheat for 3 minutes. Preheating ensures immediate searing upon adding the chicken.
  5. Place the seasoned chicken cubes in the air fryer basket in a single layer with small spaces between pieces. Work in batches if necessary to avoid overcrowding.
  6. Air fry at 400°F for 8-10 minutes total. At the halfway point (4-5 minutes), shake the basket or flip the chicken bites to ensure even browning.
  7. Check that the internal temperature has reached 165°F (74°C) using a digital thermometer. The exterior should be golden brown and crispy.
  8. Transfer the chicken bites to a plate and let rest for 2 minutes to allow juices to redistribute before serving.

Note

  • For maximum crispiness, ensure chicken pieces don't touch in the air fryer basket
  • Chicken must reach 165°F internal temperature for food safety
  • Store leftovers in an airtight container for up to 3 days
  • Reheat in air fryer at 375°F for 3-4 minutes until crisp and heated through
  • Chicken thighs can be substituted for even juicier results
