Ingredients
  

  • 2 boneless, skinless chicken breasts (6-8 oz each)
  • 2 tablespoons olive oil
  • 1 tablespoon Cajun seasoning blend store-bought or homemade
  • 1/2 teaspoon kosher salt reduce if your Cajun blend contains salt
  • 1/4 teaspoon freshly ground black pepper
  • 2 teaspoons brown sugar optional, for enhanced caramelization
  • 1/4 teaspoon baking powder optional, for improved surface browning

Method
 

  1. Pat chicken breasts dry with paper towels to remove excess moisture. This crucial step ensures better spice adhesion and surface browning.
  2. Optional: If breasts are uneven in thickness, place them between plastic wrap and gently pound with a meat mallet until an even thickness of approximately ¾ inch is achieved.
  3. In a bowl, combine olive oil with Cajun seasoning, salt, pepper, and optional brown sugar and baking powder. Mix to form a paste-like consistency.
  4. Coat chicken breasts thoroughly on all sides with the seasoning mixture, pressing gently to adhere.
  5. Allow seasoned chicken to rest at room temperature for 15-20 minutes for more even cooking and better flavor penetration.
  6. Preheat your air fryer to 380°F (193°C) for 3-5 minutes.
  7. Place the seasoned chicken breasts in the air fryer basket, ensuring they don't overlap. Leave space between pieces for optimal air circulation.
  8. Air fry for 6 minutes, then flip the chicken breasts using tongs.
  9. Continue cooking for another 6-8 minutes until the internal temperature reaches 165°F (74°C) when tested with a meat thermometer at the thickest part.
  10. Transfer chicken to a cutting board and tent loosely with foil. Allow to rest for 5 minutes to redistribute juices throughout the meat.
  11. Slice against the grain for maximum tenderness and serve immediately.

Note

  • For exceptional juiciness, brine chicken breasts in a solution of 4 cups water, 2 tablespoons kosher salt, and 1 tablespoon sugar for 30 minutes before patting dry and seasoning.
  • Don't crowd the air fryer - proper air circulation is critical for even cooking and browning.
  • Apply most spices before cooking, but reserve about 20% of your Cajun blend to apply immediately after cooking for a layer of fresh, aromatic flavor.
